Grilled Sweet Potato in a Rosemary Butter Sauce

I quartered mine to put in a grill veggie pan I have and we basted them in the sauce as they cooked. I love sweet potatoes and these didn't disappoint. I used fresh rosemary from my garden for this recipe. Will definitely be making this at our next bbq. Here's the link to the recipe

Brooklyn Smorgasburg


This food event has been on my bucket list for a long time, was amazing, loved everything we had. I didn't get a picture of the wonderful ice cream sandwich I had - had a homemade cookie with salted caramel and coffee ice cream. We also got iced coffee from 2 different vendors, Kyle had stuffed octopus, took home salted caramel peanut butter from another vendor, got a slice of oreo red velvet cake for home. If you're ever in the area you have to check this place out, can't wait to go back.

 Scotch egg, haven't had one since London and loved this one, can't wait to try another version they have on our next visit. This was lamb with a yogurt sauce.

 Ramen noodle burger, the longest line of the day, but worth it

Italian Sausage Tortellini

 I used ground sausage for this because the supermarket I went to was out of regular italian sausage. I also added some carrots to my sauce since I had some to use up from another recipe. Peanut Butter Oatmeal Balls


I saw these on The Chew which I always record since I work during the day. These only took minutes to put together and are a great snack when you are craving something sweet. I got the chocolate chips at Trader Joe's and I love the use of the oats in these. I love my scraproom. My comfy chair was a great online find and the shelves I got on sale from Target and Michaels. I also have a closet with shelving to store other items. The birdcage is a decal I got from Pier 1 Imports. Princess usually keeps me company relaxing on the chair while I scrap.

Hasselback Tomato Caprese



We had some friends over for a bbq, unfortunately the weather got cold so we ate inside. I wanted to make it a little fancy so I found this recipe for a different take on caprese on pinterest. To hopefully welcome summer weather soon I served the grilled burgers and the caprese I made with a local brewery Summer Ale. Cold Brew Iced Coffee

Lemon Risotto with Mascarpone



  • 6 cups chicken broth
  • 2 lemons (1 zested and juiced, and 1 peeled)
  • 2 tbsp olive oil
  • 2 lg shallots, finely chopped
  • 1 lg garlic clove, finely chopped
  • 1 1/2 cups arborio rice
  • salt and pepper
  • 1/2 cup dry white wine
  • 3 tbsp marscarpone cheese
  • 1 up fresh grated parmigiano reggiano cheese
  • basil leaves
  1. In a medium pot, heat the stock and the peel of 1 lemon over medium- low. Cover and keep warm.
  2. In a large skillet, heat the olive oil, two turns of the pan, over medium-high heat. Add the shallots and garlic and stir until softened, about 5 minutes. Add the rice, stir until coated, about 1 minute. Season with salt and pepper. Add the wine, stir until evaporated, about 2 minutes.
  3. Add about 2 cups warm stock and cook, stirring frequently, until almost evaporated, about 6 minutes. Add 2 more cups stock and cook, stirring frequently, until almost evaporated, about another 6 minutes. Add 1 cup stock and the lemon zest, stir until almost evaporated, about 3 minutes. Taste the rice, if it's tender but still has a bite to it, stir in the lemon juice, mascarpone and 1 cups parm cheese. Season and stir in some of the remaining stock if the risotto isn't saucy enough. Divide among bowls and garnish with basil and more grated cheese.
